Ingredients
Cupcakes:
- ¼ cup cocoa powder
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 large eggs, room temp
- 1 cup granulated sugar
- ⅓ cup melted coconut oil
- 2 teaspoons vanilla extract
- 1 tsp instant coffee mixed with 1 tsp warm water
- ½ cup buttermilk*
- ½ cup mini chocolate chips, plus more for topping
Frosting:
- 2 Tbsp milk
- 1 Tbsp matcha powder
- 1 stick (1/2 cup) butter, room temp
- 3 cups icing sugar
