Ingredients

Panna Cotta
  • 2¼ cups plain or vanilla non-dairy milk (soymilk, coconut or almond milk works well, too)
  • ¾ cup cooked, puréed pumpkin
  • 1 teaspoon cinnamon

  • ¼ teaspoon ginger powder
  • ⅛ teaspoon clove
  • ⅛ teaspoon allspice
  • ¾ teaspoon agar powder (be sure to measure this one precisely)
  • ¼ cup sugar
  • 1 Tablespoon coconut oil
  • pinch of salt
  • ½ teaspoon vanilla extract
Pumpkin Seed Brittle
  • ¼ cup unroasted, shelled pumpkin seeds / pepitas
  • 3 Tablespoons sugar
  • pinch of salt
